I love avocados! I literally eat them 3 or 4 times a week. I put them in salads or spread mashed avocado on Matzo. Sometimes I eat them plain with a splash of lemon or lime juice. My absolute favorite way to eat them is avocado toast. It’s so easy to make, you probably don’t need a recipe, but just in case you do, this is one of my favorite ways to make it.
I prefer using Haas avocados. They need to be soft but not mushy. If they’re hard, they will have no flavor. Simply cut the avocado in half. Using a spoon, scoop out the flesh and remove the pit. Put it in the bowl and immediately add the lime juice. The acid from the juice will keep the color vibrant and the acid will balance the flavor and enhance it.
I use two forks to mash it. Add a pinch of Himalayan pink salt and it’s done!
For this recipe I used Ezekiel organic sprouted whole grain bread. I also make it with Whole Food’s Seduction Bread. Any wonderful hardy bread will add to the flavor. Toast the bread and spread the mash over the toast.
Now for the best part – the toppings! It’s really endless what you can top it with. Today I am topping it with Everything Bagel Spice. You can buy it from Trader Joe’s or make your own. I sprinkle the bagel spice on generously. Then top it with chopped pistachios, a sprinkle of red pepper seeds and finish it with kale micro greens. I love using the micro greens because they are packed with super nutrients. Quick, easy and healthy!

1 Ripe Avocado
1/3 Fresh Lime – juiced
Pinch Himalayan Sea Salt
2 Slices of Hardy Bread
Pinch Red Pepper Seeds
Trader Joe’s Everything Bagel Seasoning – as needed
24 Pistachios – chopped
